It's okay. It's okay. I had no idea it was a food you ate.

It wasn't until later that I noticed it on the menu of a restaurant serving traditional American food. Pork chops, apple pies, the works. The menu also included succotash which sounded delicious. It was not on my menu (hey, it was a young and inexperienced me!) Someone else ordered it and let me tell that, it smelled and looked so good. The smell of the spices made me forget about my meal and go for theirs. Meanwhile, the abundance of vegetables (with a little bacon) made me salivate (yes, I ate my burger).

That day, I learned an important lesson. When possible, get the 'tash.

What is Succotash?

Succotash, an American dish that has Native American roots, is a traditional Native American food. It is made up of lima beans, also known as butter beans, cooked with other vegetables and then seasoned (think herbs, spices, salt, pepper and thyme).

These are the basics. You can always add more vegetables. Many people choose bell peppers or onions to go with the beans and corn. Like most old recipes, there are many variations. Some of them even include meat like bacon or Ham.

All the ingredients should be cooked in butter or olive oil to achieve the desired tenderness. You can eat this as a side dish, an entree or even stuffed into a wrap.

Is this Succotash recipe healthy?

Succotash, as a dish that is primarily vegetable-based, can be a very nutritious food, full of vitamins, minerals, and other nutrients. This particular version has a little bacon in it, but I only use it as a flavoring. Olive oil is used sparingly, but it's considered healthy. Herbs and spices, which are rich in antioxidants, are also healthy.

Ingredients

You will need a lot of ingredients but, if you already have a decent spice rack, then you probably have them all.

  • 1 tbsp olive oil
  • 1 cup diced smoked bacon
  • Half a brown onion, finely chopped
  • 2 cups of lima beans
  • 2 cups corn kernels
  • 1 cup cherry tomatoes, sliced
  • 1 red pepper diced
  • Half a teaspoon of garlic powder
  • 1 tsp smoked paprika
  • 1 tsp fresh chopped sage
  • 2 tsp chopped parsley
  • 10 Basil Leaves
  • 1 tbsp of salted butter
  • Salt and pepper

Instrucciones

Fry

Pour olive oil in a large saucepan. Fry the bacon and onions over MEDIUM-HIGH heat for 6-8 mins, or until the onion turns translucent and the bacon becomes crispy.

Add

Fry for 5 more minutes. Add the lima bean, corn, tomatoes and peppers. Garlic powder and smoked paprika can be added.

Add

Serve warm with butter, fresh herbs, salt and pepper.

Variations

  • Replace the lima beans with edamame, chickpeas or chickpeas.
  • Zucchini is a vegetable that is not often considered for succotash (despite the fact both vegetables have double Cs). Zucchini is a great vegetable that tastes good, has a lot of fiber, and, due to its high water content will keep you hydrated.
  • Use fresh garlic powder instead of the powder if you prefer a stronger taste.

Succotash - What to Serve with it

If you plan to serve this succotash with a variety of entrees, they will all taste great. You can leave the bacon out if you don't want to.

Crispy air-Fried fish:Yes there is a new trend. Breaded meat makes a great addition to the Succotash! This fish has been air-fried so it's a healthy option when served with a dish that is heavy on vegetables.

Oven Cooked Top Sirloin: A hearty meal with veggies and a slab meat.

Egg White Wraps: A little different. You may remember that I said earlier that succotash can be used as a filling in wraps. Here is a recipe to make a wrap. Simply replace the filling on this recipe card with succotash. Learn how to make egg white wraps!

Applesauce and Sweet Vegan Cornbread: These recipes all put the succotash to the side. (It's like putting Baby into the corner - but NOBODY puts Baby in a corner!) Move the succotash to the center of your plate, and then make cornbread to accompany it.

FAQ

Can I use regular paprika instead of smoked paprika?

The smoked paprika will make the dish taste like chorizo. Yum!

Can I make this recipe vegan or vegetarian?

You can absolutely leave out the butter and bacon. You can still enjoy the dish and it will taste great. There is plenty of plant-based proteins in there, thanks to all the lima bean.

Can I use frozen veggies instead of fresh vegetables?

Fresh vegetables have a superior texture and taste.

Succotash Storage

Let the succotash completely cool. It should last up to four days in a refrigerator if you store it in an airtight container. You can freeze succotash. Divide the succotash into smaller portions before freezing. This will make it easier to reheat some of the sucotash. Place the portions in freezer-safe containers. Heavy-duty freezer bags are ideal. Before sealing, squeeze out excess air. The 'tash up should keep in the freezer for 4 months.

Let the succotash defrost in the refrigerator overnight. Then, you can warm it on the stovetop or microwave. You may wish to add more herbs and spices.

Notes

  • The regular paprika will not change the taste as much, but you can substitute it for the smoked paprika I have recommended here. The smoked kind of paprika gives the dish a taste similar to chorizo. Yum!
  • You can make this dish vegan or vegetarian by removing the butter and/or bacon. It will still be delicious, and the lima bean content is sufficient to provide enough plant-based proteins.
